The Famuyiwa Dinner Diary : Polish Food

In continuing with my international food theme, this week’s Famuyiwa Dinner Diary features food from Poland. It’s not a cuisine that I’ve heard or know much about so it was fun to learn about it and try some new things. Overall, the food was very tasty and I picked up a few new cooking techniques. The flavors were great and the food was easy to prepare. All of the ingredients were easy to find at my local grocery store so that was also a plus! My only complaint was that, though easy, preparing some of the recipes was time consuming. I’ll add that this can be avoided with a little preparation beforehand so that was on me. Next time I’ll plan accordingly.

 

First up is Pieczen Rzymska Z Jajkiem. This is basically a Polish meatloaf with egg. This recipe was amazing. The whole family loved it and it didn’t take long to come together. The meatloaf was moist and flavorful and packed with veggies, a mom’s dream. I served it with mashed golden potatoes and roasted asparagus.

Next we had Gołąbki, also called stuffed cabbage or cabbage rolls. I have prepared this many times for my family. It was the inspiration behind my choice of Polish food for the week. This meal does take some time to prepare with the bulk of the work going into steaming and carefully removing the cabbage leaves. The leaves slide right off when steamed but you have to work in layers. I steam the whole head for a couple minutes. Remove the outermost leaves and steam again. You repeat this until you have the desired amount of leaves. It’s not hard to do but it does take time.

Following the previous two meals, we had fasolka po Bretonsku. This translates to beans a la Brittany (the region in France). I thoroughly enjoyed this meal but the name made me love it even more. I go by Bibi on the internet and in the social media streets but the name my mother gave me is Brittany. Fasolka po Bretonsku was incredibly quick and easy to make. It was saucy from the tomatoes, full of smoky flavor from the bacon and filling from the fiber rich beans!

Last was krokiety, a stuffed crepe that’s breaded and fried, and salatka jarzynowa very similar to American potato salad.

In researching, I read that krokiety is often stuffed with mushroom so I went with what I assumed to be the traditional route.  They came out beautifully. They were crispy on the outside and soft on the inside. I enjoyed them but my family, however, did not.

It took me a very long time to make these. Almost an hour. There are several steps involved: chopping the mushrooms, onions, and herbs, cooking out the liquid, making the crepes, stuffing and rolling them breading them then finally frying. This may not be time consuming for someone familiar with the recipe but considering that this was my first time, it took quite a while.

My son (who loves mushrooms) was so tired of waiting on dinner that he filled up on snacks and had no appetite by the time it was done. After a couple of bites, my husband (who has never not eaten the mushrooms I’ve cooked) told me he’s not a fan of mushrooms. So, its safe to say this recipe won’t be repeated. At least not with mushrooms.

On the other hand, the salatka jarzynowa was a hit! Excluding mustard, it had all of the ingredients that I use in my potato salad recipe along with other veggies and fruit. Yes, fruit. There are peas, carrots, celery, onions, and apples in this salad. You can even add corn and beans. It was delicious and my husband devoured it.
