SHRIMP & GRITS
Other than chicken and waffles, my favorite brunch meal is shrimp and grits! I made a batch for my husband and my sister while she was in town and they loved it! I wanted to share the recipe on the blog because I know you’ll love it too. It’s simple to make and sure to please.
Ingredients
1 1/3 cup grits
1 cup milk
1 cup water
1/2 stick of butter
Salt and pepper
3 strips of bacon chopped
3 cloves of chopped garlic
Half of a red pepper cut in strips
Half of a yellow pepper cut in strips
Chopped green onion for garnish
a few pinches of shredded parmesan cheese for garnish
In a sauce pot bring 2 cups of water and 2 cups of milk to a slight boil. Pour in the grits and whisk. Lower the heat and let simmer with a lid whisking every 3-4 minutes until the grits are done. About 10 minutes in add in the butter and salt to taste. You may need to add more milk if your grits become dry before they finish cooking. In a skillet fry the bacon pieces and set aside. Drain the bacon fat and in the same pan brown the garlic and peppers. Toss in the shrimp and cook thoroughly. Remove the shrimp, garlic, and peppers and place in a bowl with the bacon pieces. Pour ½ cup of water into the pan and run a spoon along the pan to lift the brown bits. Slowly add 3 tablespoons of flour and continually stir or whisk to create a gravy. Use this gravy to drizzle over your shrimp, grits, and peppers. Garnish with green pepper and parmesan cheese.
