Chicken Salad Lettuce Wraps

Chicken salad is one of my favorite summer time dishes. It’s creamy, crunchy, savory and sweet. Come on! You can’t beat that. You get all that flavor and texture and it’s beyond easy to make. I’ve spent the past few months doing A LOT of cooking for a project I’ve been working on so I’m now living for easy breezy salads and pasta dishes.

You don’t have to eat this chicken salad in a lettuce wrap. It’s great on a croissant, on wheat bread, in a tortilla, on a cracker or straight from the bowl. Take your pick.

So let’s get to what you came for. The recipe.

Ingredients:

1 head of lettuce (I recommend any type of butter lettuce but you can use whatever you like. I had romaine lettuce on hand, as pictured above.)

1 Rotisserie chicken

1 stalk of celery

a handful of grapes

1/2 cup mayo

1/2 tbsp dijon mustard

salt and pepper

green onion for garnish

Steps:

1. Remove and discard the skin and bones from the chicken. Chop the chicken into small bite size chunks.

2. Chop the celery into small pieces. Also, chop the grapes in halves or quarters (whichever you prefer).

3. Put all ingredients into one bowl and mix. Sprinkle in salt and pepper to taste.

4. Chill in the fridge for at least an hour. Scoop the salad into your lettuce leaves. Garnish with green onion and serve.
