The Famuyiwa Dinner Diary : Sudanese Food
Well guys, it has been a fun journey and it’s finally come to an end. Last up on the Famuyiwa international themed dinner diary is Sudanese food. I planned to do at least one more country but I’m burnt out and ready to go back to my usual. The whole purpose of this was to pull myself out of a dinner rut so the mission was accomplished. I looked at a map and randomly selected Sudan/South Sudan as the country I would cook from this week. The research process showed me that Sudanese food is getting very little love in these Internet streets. The same 2-3 websites came up…

The Famuyiwa Dinner Diary : Polish Food
In continuing with my international food theme, this week’s Famuyiwa Dinner Diary features food from Poland. It’s not a cuisine that I’ve heard or know much about so it was fun to learn about it and try some new things. Overall, the food was very tasty and I picked up a few new cooking techniques. The flavors were great and the food was easy to prepare. All of the ingredients were easy to find at my local grocery store so that was also a plus! My only complaint was that, though easy, preparing some of the recipes was time consuming. I’ll add that this can be avoided with a little…

The Famuyiwa Dinner Diary : Asian Meals
I take pride in making delicious, healthy meals for my family. I also enjoy cooking so I’m not afraid to try something different. In my house we really enjoy variety so we rarely eat the same meal twice for at least a month (unless we really loved something and need an encore). With that said, I’ve been stuck in a dinner rut lately. It has been a struggle to come up with a weekly menu that I’m excited about. My husband always suggests I look back over old menus I’ve made and re-do them but not even that was getting me exited about dinnertime. Then it hit me! Why not…

Chicken Salad Lettuce Wraps
Chicken salad is one of my favorite summer time dishes. It’s creamy, crunchy, savory and sweet. Come on! You can’t beat that. You get all that flavor and texture and it’s beyond easy to make. I’ve spent the past few months doing A LOT of cooking for a project I’ve been working on so I’m now living for easy breezy salads and pasta dishes. You don’t have to eat this chicken salad in a lettuce wrap. It’s great on a croissant, on wheat bread, in a tortilla, on a cracker or straight from the bowl. Take your pick. So let’s get to what you came for. The recipe. Ingredients: 1…

Easy Potato Salad
Wooooo! I love myself some good potato salad. It’s one of those foods that people are picky about because potato salad is either good or bad. There is no in between. My mom taught me how to make it when I was a teenager. It is literally one of the easiest recipes to make but people like to get fancy adding special seasonings and ingredients and therein lies the danger. That’s not to say that extra ingredients make it bad. You just have to know what you’re doing. My mom knew a lady that made a shrimp potato salad that was flip-the-table good!! I’ll be the first to say this…

MAC & CHEESE MUFFINS
I’m not too sure what kind of Thanksgiving I’ll be having this year. Considering that I’ve had to host for the past 4 years I was certain that I would go small and not stress this year…but I though the same thing last year and that didn’t happen then either. Any way it goes, there’s one food that’s a non-negotiable in my family. This dish is my husband’s favorite and therefore must be on the table. It’s the mac and cheese. Last year, I tried something new and made mac and cheese muffins for the first time. My, oh my! They were a hit! In fact, I had to make…

WHERE WE ATE IN SEASIDE
As the primary chef of my home, one of the best parts of vacation having someone else do the cooking. I love being in the kitchen but a break is always welcomed. Though I did cook a few meals at the beach house in Florida, I enjoyed not having the responsibility of preparing all the meals. There are a variety of great places to eat in Seaside. There were several places I wanted to try. We couldn’t hit them all but we did thoroughly enjoy the restaurants we visited. Here’s what we ate. The Meltdown On the low end, we call it grilled cheese. On the high end, it’s…
