SHAWARMA CHICKEN AND VEGGIE KABOBS

We’ve all been stumped on what to make for dinner. You go back and forth in your head, then check the freezer and sigh. Chicken it is. If that sounds like you, don’t worry! I’m here to help you bring life to a boring chicken dinner with some Mediterranean flavors that are mouthwateringly delicious. Sometimes a bit of new flavor is just what you need and the flavors in this recipe are amazing!

Ingredients

3 chicken breasts

3 medium zucchini

1 red bell pepper

2 yellow bell peppers

1 medium red onion

2 tbsp olive oil

 

Shawarma Seasoning:

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon ground cinnamon

1 teaspoon paprika

1/8 teaspoon cayenne pepper

1 1/2 teaspoons salt,

1/2 teaspoon black pepper

 

Yogurt Sauce:

3/4 cup plain Greek yogurt

1 tbsp dill

1/2 tbsp garlic powder

1/2 lemon

salt and pepper

 

Start by cutting your vegetables into 1 inch chunks. Toss them in olive oil and half of the shawarma seasoning. Cut the chicken breast into 2 inch cubes and place the chunks into a bowl. Sprinkle on the remaining half of the shawarma seasoning and evenly mix so that all of the chicken is coated. Thread the chicken and vegetables onto the skewers then place the skewers into a baking pan to go in the oven for 40 minutes at 375 degrees. Alternatively, you could place these on the grill for even more flavor.

For the sauce: Mix the juice of half a lemon, dill and garlic powder into the greek yogurt. Add salt and pepper to taste.
