Easy Potato Salad

Wooooo! I love myself some good potato salad. It’s one of those foods that people are picky about because potato salad is either good or bad. There is no in between. My mom taught me how to make it when I was a teenager. It is literally one of the easiest recipes to make but people like to get fancy adding special seasonings and ingredients and therein lies the danger. That’s not to say that extra ingredients make it bad. You just have to know what you’re doing. My mom knew a lady that made a shrimp potato salad that was flip-the-table good!!

I’ll be the first to say this recipe is as basic as basic can be….but that’s what makes it good to me. You can build on it and make it your own or enjoy the simple flavors as they are.

Peel and chop the potatoes into 1- inch cubes.
Boil the potatoes and eggs together.
Chop the eggs and add to the bowl of potatoes along with the remaining ingredients.
Chill and enjoy!

Ingredients:

  • 3 potatoes
  • 3 eggs
  • ¾ cup mayo
  • 1 ½ tbsp. yellow mustard
  • 1 tbsp sweet relish
  • salt and pepper

Steps:

1. Peel and chop the potatoes into 1-inch cubes.

2. In a large pot, boil the potatoes along with the eggs.

3. When the potatoes are soft, drain them in a colander and rinse with cool water. Place them in a bowl and set aside.

4. Peel and chop the eggs. Add them to the bowl of potatoes and mix in the remaining of the ingredients. Season to taste with the salt and pepper.

5. Refrigerate the potato salad for at least 2 hours. Serve cold.
