    In continuing with my international food theme, this week’s Famuyiwa Dinner Diary features food from Poland. It’s not a cuisine that I’ve heard or know much about so it was fun to learn about it and try some new things. Overall, the food was very tasty and I picked up a few new cooking techniques. The flavors were great and the food was easy to prepare. All of the ingredients were easy to find at my local grocery store so that was also a plus!     I take pride in making delicious, healthy meals for my family. I also enjoy cooking so I’m not afraid to try something different.     For a long time my pantry was a pain in the neck! Every time I opened the door and saw the colorful heaps of boxes, bags and cans facing every which way I shuddered in disgust.     Taking Mommy Breaks

    Back in June of 2020 I fell very ill. It was a difficult time. I spent weeks on self-appointed bed rest, which was extremely hard to do with a needy toddler. Thank God that my husband was and is still working from home. He was a big help. I must admit though, receiving his help was not easy for me. I’m used to being superwoman in the home.     Wooooo! I love myself some good potato salad. It’s one of those foods that people are picky about because potato salad is either good or bad. There is no in between.
